Peanut Butter Fudge 

In attempting to consume more coconut oil as part of my daily nutrition, I’ve put together this very easy recipe which makes it a simple and delicious task! 

Why coconut oil? Ive been a lover of (good) fats for a long time for which I’ve written about previously and for good reason.  Coconut oil is a powerhouse of nutrition and healing and has transformative effects on immunity, dental health, brain health, skin, hair, heart and joint. If you are not already a convert do your own research, better yet experiment for yourself by starting here.

This recipe is a great way to get a little hit of this wonderful fat, that won’t weigh you down and is a perfect, nutrient dense energy booster for in between meals. Add in the benefits of camu camu and you will be firing, body and mind on all cylinders throughout the day.  



What you need: 


  • 1 cup organic peanut butter 
  • 1 cup coconut oil
  • 1/2 cup raw honey
  • 1 tablespoon camu camu powder 
  • 1 teaspoon cinnamon
  • 1/3 cup coconut oil (extra)
  • 1/3 cup raw cacao 
  • 1/4 cup raw honey (extra) 


What you do:


Melt 1 cup coconut oil and stir through peanut butter, honey, cinnamon and camu camu. Pour into small tray lined with baking paper and place in freezer to set.

Melt extra coconut oil with cacao and extra honey over low heat, stirring until just combined. 
Take the peanut fudge out of freezer and slice into small squares (about 12-16). With a fork dip into melted chocolate and line on baking paper. Return to freezer to set. Repeat this process if you want a thicker coating of chocolate. 

Makes about 16 squares 
Recipe can be deliciously veganised by replacing honey for maple syrup!
