Peanut Protein Cookies

It took longer to write this post than it did to prepare and bake these babies.

A high protein, nutrient dense cookie packed with good fats and fibre. 


What you need:

  • 10 medjool dates, pitted
  • 1 cup peanut butter
  • 2 scoops high quality protein powder
  • 2 tablespoon ground flaxseed
  • Pinch cinnamon 
  • 3 tablespoon coconut oil
  • Teaspoon apple cider vinegar
  • Teaspoon bicarbonate soda

What you do:

Oven to 180. All ingredients into food processor. Blend 5 mins or until mixture is moist and well combined. Roll into balls and press flat into lines baking tray. Bake 12 mins.
